(Serves 4-ish)
Tools Needed:

large boiling pot, filled with water

Spätzle press

Slotted ladle/ spoon

Colander

Large mixing bowl
-
Wooden spoon (optional wooden, Omi’s preference)
Ingredients Needed:

3-4 eggs
-
3 (ish) cups of All Purpose Flour (add more as needed)

Salt (iodized/ table salt)

Water
1.) fill pot with a generous amount of water (salted water optional), set on stove to bring to boil, spätzle must be able to “swim” in water
- about 3/4 of a way
2.) in a mixing bowl, measure 3 cups of all purpose flour (say “boom”, Omi’s preferred measurement count)
3.) to taste, add 4 eggs (the more eggs you add, the more yellow noodles become, some do 3, 4 is Omi’s preference)
4.) mix with a wooden spoon (or any spoon) until combined
5.) add a few dashes of salt (4 booms)
6.) mix until achieving crumbly texture
7.) add water, a little at a time
- start with 1 cup, stir
- fold it in
- add another 1/2 cup as needed
- keep folding
- if it becomes to thin, add more flour
- you are looking for a consistency slightly thicker than a paste, almost like a dough
- mix well until fully combined and no flour is visible
- it shouldn’t be so thin that it drips off the spoon, but rather should hold it’s shape and form on the spoon
8.) prepare the press, fill with dough mixture, about 3/4 full
9.) the water must be at a complete boil, otherwise the noodles may clump together
10.) rest press* on pot, press dough through, dunk they press into the water and then scrape noodles off with knife
- stir the noodles in the pot with the knife immediately to help keep them from clumping together
11.) do not crowd the pot, only cook one "press" at a time
12.) when a batch (one press) enters the pot, cook them up to a boil, until the water raises up and becomes foamy (about 5 minutes)
13.) use a slotted spoon to remove noodles from boiling water to be placed into a colander
14.) rinse with cold water so that the noodles do not stick together
15.) repeat process with new batch
Serve with salt as needed, gravy, fried onions or shredded cheese
*If you do not have a spätzle press, use a damp wooden cutting board, and spread the dough thin, then using a small knife, scrape small “noodle sized” amounts into water with a short and quick motion
